No, it doesn't get replaced, and no, all the matter in the universe will not disappear. Matter that falls into a black hole just stays in the black hole.
But matter that falls to Earth (meteors) just stays on Earth too. After all, it is only recently that we intelligent humans have invented rockets that can take things off the Earth. Otherwise, everything that falls to Earth is just as trapped as something that falls into a black hole. And you don't expect the Earth to pull in all the matter in the universe, do you? Similarly, black holes will not pull in matter; they merely keep the stuff that by chance falls on them, just like the Earth does. Just like every planet and star in the universe does.

Replaced? No, it is not gone. It is in the black hole.
Will all matter disappear into black holes? Maybe, maybe not. That is a lot like saying if I drop an apple, will it fall to Earth? Depends on where the apple is. If all matter in the universe is within the gravity field of a black hole, then it just might.

if matter goes into the area of a black hole it basically dissolves into another energy state of xray and gamma ray.
black holes are made up of positrons if you check the nasa website on black holes.
to help you better understand,
matter = +1
antimatter = -1
so,
+1 and -1 = 0
positrons are positively charge particles and electrons which orbit atoms are made of electrons, which are negatively charged particles.
that is why light disappears, it does not get sucked into a black hole, it just combines with what the black hole is made of and changes form, although the gravity probably is really strong.
matter would dissolve into energy.
black holes arent really holes they are just made up of something that destroys what we see to give the impression that it disappears or gets sucked in.

Matter evaporates from black holes (to outside the blackhole). Eventually entire balckholes evaporate. The time is takes to evaporate is proportional to the size/mass of the blackhole and is thought to be extremely long.
