Elmo is a great one. Anything with lots of shapes and bright colors. Kids around 8 months are usually starting to crawl, some are even learning to walk so keep that in mind. When you go into Target or any other store that sells children's toys they should have the sections sorted by age.
Also try not to buy anything that is under their age range. It's better to get a gift that they can use in the future then one that the child will out grow of in a month.

He's not old enough to open gifts on his own, so this is actually pretty easy. Maybe a toy that plays music or one that is really colorful - stuff animals are good too. Or clothes, diapers & wipes... everyday items that will help out the parents.

My niece was around the same age last Christmas we got her her first Christmas ornament, an outfit, a homemade stocking and a cd of classical music.

Anything bright and colourful or makes a noise! Kids that young dont really take it in at that age anyways, so dont over spend!

One of those toys where that has lots of things you push and they make sounds or twirl around or do something. It stimulates them and they learn a lot of coordination from them.
