Because the song isn't about Johnny, it's about the songwriter's apathy toward Johnny (or anybody) cracking corn. It's the same reason we hear songs about people in bad relationships. Other people can relate to it. Maybe there was a whole community of corn crackers and this one guy was the lone dissenter who refused to crack corn.

Nobody did care enough to write a song about Johnny cracking corn...but they did care enough to write a song about JIMMY cracking corn!

There ain't... (The song was about JIMMY!)
And the reason there's a song is because the person SINGING the song wants to let everyone know that THEY don't care about Jimmy crackin' corn. The cool thing is that Jimmy wasn't even thinkin' about the singer of the song, 'cause he never responded with a song called "I Don't Care That You Don't Care That I Cracked Corn".

The master's gone away!

It's a very old song from the time that slavery and plantations. They are talking about shucking corn. Someone, however, cracked the corn and the person singing doesn't care because no one is getting in trouble for it since the master is away.

Actually, honey, it was Jimmy who cracked the corn.

Now, we should change the lyrics to say:

"Jimmy cut cheese, and I don't care."

That would get people's attention.
