You know one of the best things about hockey. As a whole they represent themselves with far more class than the other sports, most are very freindly and gracious when approached as long as the fans act with respect. Not always so with athletes from other sports. As far as respect I've seen a lot of great names mentioned already and have to concur with the rest of the answers as they have named some great ones.
For me it is also a very easy answer to say Steve Yzerman along with Gordie Howe (ever seen him not smiling and I have seen him many times and he always treats everyone with such class and will take his time). And most "tough guys" are almost always some of the nicest people you could ever meet, a personal favorite for me is Chris Neil (Ottawa) .I have seen him after a couple of very rough games yet he left the arena with a smile and took his time with the fans that hung around to meet him (during his AHL days with the Griffins).

Steve Yzerman. he is quite possibly the greatest player ever. It wasn't the goals or the assists that he contributed it was the leader ship. he was captian for 20 years longest ever for 1 team. he led this team to 3 stanley cups and he will be in hall of fame where everyone can remember his greatness

I've got to say, actually, Bryan Berard.
He all but lost an eye and had to have like three eye surgeries to see even only a bit better than legally blind. Then he went back to the NHL even though most everyone tried to convince him against it - and had three really pretty good seasons. Too bad that he tested positive for steroids or something at the Olympics and that he's had such problems with his back. He's not the player I like the most but he's the player I respect the most.

In this 06-07 season, no dought I would go for Joe Sakic, Colorado Avalanche Captain who I respect because hes a good leader, good player, might be a veteran but still has skills, and I had a chacne to met him at the Bell Center in Montreal when I went to see the Avs play. In all NHL history, Patrick Roy would be my choice.

I am a huge wings fan and respect Stevie Y more than any other. I moved to Denver a couple of years ago and even though I hate the Avs, Joe Sakic is truly a class act also. Those, to me, are the guys I respect and admire the most, OH! other than Reg Dunlap of course!!

Saku Koivu. He's not the best captain points wise. He doesn't score many goals or a 100 point scorer but he's the heart and soul of the Montreal Canadians. He leads by example. He beat cancer courageously. He had many injuries over the years but still plays tough even with one eye(not yet 100% on the other).

GEORGES LARAQUE!
Former Edmonton Oiler, now playing for Phoenix Cyotes.
He's one of only few tough guys in the league that know how to play & fight with class!! He'll never hit a guy when he's down.
He's respected both on and off the ice. Georges is involved in so much charity work here in Edmonton. And when Edmonton talked about trading him, he even offered to stay for LESS money. It's not about the money, he plays because he enjoys the game!

I Loved Mario, Stevie Y, and Gretz.
However, for present players I choose Ryan Smyth.
He has accepted less $$ his last two contracts to stay with the Oilers.
And, when the Oilers weren't making the playoffs, Smittie always volunteered to play for Team Canada in the World Championships. He was also Captain every year he played for Team Canada.
