Christmases.

Because the root of the last part is "mass," and the plural of "mass" is "masses," it should take on the -es ending.

As far as I know, plurals should not be made with apostrophes.

EX. The last time I gave him a gift was three Christmases ago.

However, since Christmas only comes once a year, the word is not often used in plural form and a sentence like the one above would most likely be modified to read:

The last time I gave his a Christmas gift was three years ago.
