Veterinarians are ultimately responsible for any care that is given in their clinic. To that end they have a serious interest in your skill level, and making sure that you do everything by the book. If you have questions, especially when you first start off, they should be more than happy to help you out. Each clinic will have different procedures and protocols depending on what the vet specializes in, where they went to school, what post graduate/continuing education training they've done, etc. so they will make sure to either work with you, or teach you how they would like everything done. Also, different vets within a clinic will have different preferences... So yes, they will definitely help to some degree. Since you have an educational background that supports your position, they may not teach you everything, but they should be able to answer questions and clarify anything you have concerns about.

No superior expects to just hand the job to a newbie. They will expect you to have a basic working knowledge of the standard procedures and be quick to learning the routines in their clinic. Before you go looking for a job try volunteering at a few of the local vet clinics. This will let you see which ones you really want to work in, give you a foot in the door, and help you overcome any anxiety over your skills. I've done it, just for fun, and it was really not all that hard - easier than working in human medicine. Relax. If this is what you really want to do you will be fine.
BTW how can you be "teaching yourself" to be a vet tech???

There is always going to be on the job training at any place you work . Each vet clinic has different ways of doing things so yes they will have to train you on how things work .

Most places have a training schedule that they use in training new employees. Don't worry you would be surprised what you will remember when needed. I started out as a bather 35 years ago and have been a tech for 20 + and you never know everything : > )

Most vets will train you to do things they way they like things done. Like how they prep a surgery, or what their protocol is on certain things, so dont worry. Heck I knew nothing and was fully trained (not certified) by my vet. So good luck
