Does she have any dream vacations spots in the world? Maybe get her a travel guide, cookbook, and nonfiction book about that place and wrap it in a suitcase with some simple foods from that place.
The Christian bookstores do have some really nice fiction about women in the Bible. "The Red Tent" was good. I don't recall the author, but there are several books like that to choose from.
Orson Scott Card wrote some books about biblical personalities that were really nice.

I'm getting my mom Mitch Albom's new book, Just One More Day, and the new John Grisham book, The Innocent Man. Of course, after she gets done I'm stealingthem and reading them myself! If she hasn't read them, a nice hardback classic such as a Jane Austen, Dickens, Shakespeare, Twain, or Dumas book, or To Kill a Mockingbird would be a nice gift.

Fannie Flagg writes some good books. She is the author of
"Fried Green Tomatoes at the Whistle Stop Cafe" but there are many of her books that have a sweet, simple life storyline to them. Another good one is "Can't Wait to Get to Heaven"

My mom recommends the Mitford books by Jan Karon. There are six books altogether.

Well does she like to cook, if she does then you could get her a cook book.
Ask her what she needs and right some of the stuff down because a lot of older people like stuff they need and not so much stuff they just want.

Go on line to Books by you, you can personalize her book with her name appearing in the book, and yours or another as well...Cost about 35.00, and they are really unique--Romance, Drama, Fantasy etc... My grandmother was an avid reader and always enjoyed Danielle Steele...
