Its quite obvious really, its saying that you can only know the value of something, when you have to make do without it.

For example the man crossing the river at night would appreciate the value of the light of day, it would make his crossing a whole lot easier!

Well...I would guess, that crossing a river at night is very tricky. Water looks just has dark has the night unless moon is reflecting of it's surface. He will not be able to see very clearly any obstacles in his way or be able to judge well the distance he is crossing. So the man will appreciate and value day light to complete such a tricky and dangerous task. (I am assuming there is no bridge)

It's more hard to cross the river at night.Only when a person realizes how important is a thing(here the day light) he values it enough

Its probably an old Roman or Greek philosophers saying.

In ancient times crossing a river could be a particularly hazardous undertaking, and much more dangerous at night.

Its only in the face of true danger that we understand how our fears are magnified by lesser danger.

It means that only those who find themselves in a difficult situation know how to appreciate things the rest of us take for granted. It is similar to saying that we discover importance of everyday benefits only when we lose them.

I reakon that it means that we can only appreciate success after we have experienced bad times. Or that we can only really enjoy the good time after we've been through the bad ones.

Well they say the best things in life are free

I think this means do not take advantage of the best things in life because life is a lot harder without them.

That it is easy to take everyday things (such as the daylight) for granted: it is only when you try to do things without them that you appreciate their true value.
