It comes from the water moisture in the air. Because its temperature is much lower, water moisture around the tube condenses and freezes, thus building up a layer of ice, then the process repeats itself until all the water moisture inside the freezer is depleted.

Its been a while since I took physics, but I think its condensation that freezes.
You take the tub out of the freezer and then the outside cools in the two min- ates it takesyou to get the good stuff, which attracts water vapor in the air to the tub because hot water molecules are attracted to the slower water (colder) molecules that has changed physically. Evey time you open the freezer the process continues until there is a noticeable accumilation. That last part is probably wrong, but good question and will read the other answers.

Air contains moisture known as humidity. When air comes into contact with a cold surface the water in it condenses onto that surface. Like a mirror steaming up in a bathroom when hot water is running, or on the inside of a car window when your breath comes into contact with it on a cold morning. If the cold surface is at or below freezing point as with an ice cream tub then the moisture in the air condenses on it and instantly freezes. The layer of ice then builds up. This is why the inside of freezers get iced up as when you open the door the air rushes in and the humidity condenses inside the freezer.

The air contains water vapor. When some of this water vapor comes into contact with a surface that has a temperature below the freezing point of water (the outside of an ice cream tub), it freezes.

Well the condensation on the outside (the sweat) forms when it is introduced into a new warmer climate. then when you put it back in the freezer it freezes on the outside of the tub.

Moisture in the air freezes. It can be due to small leaks in old freezer seals, especially at the corners.
