The best blanks are those that resemble the compound you want to analyze structurally. If you used isopropyl alcohol as a blank instead of water it was probably because you were anlyzing something that was structurally similar to the alcohol. Water is used in most experiments because it is cost effective but the results may not be as accurate.

Usually you check the absorbance of organic molecules.
These molecules do not dissolve in water so you neet to dissolve them in an organic solvant like isopropyl.
The problem with isopropyl is that it also absorbes light (in the UV, around 200 nm and also a little higher), so you must reduce this absorbance from the total absorbance to get the absorbance of the molecule you are trying to measure.
