As far as I'm concerned, January and February isn't the time when visitors flock to europe. But I planned a europe trip coursing over 6 countrie and some major cities like Berlin, Rome, Amsterdam, Geneva, Vienna. Do you think I should book the hostels beforehand? I'm only worried in the case we miss our train or plan to stay longer at another place, we might not be able to get back our refund.

If I had to pick 2 places that you might want to book ahead, then I'd say Rome and Amsterdam. But your list does not include any specific winter destinations (like the Alps), so I would not be too worried.

You could always ask about the reservation situation without making the actual reservation, so that would prevent any nasty surprises.
