cause you don't give it enough heat so the proteins will become inactivated.
if you give it much heat for a period of time u'll inactivate the proteins.

They do. I've never heard of a case where they don't.

The only proteins that I know of that withstand high temperatures are those used in PCR which come from thermophilic bacteria.
