Taste: Taste helps us, among other things, to select and enjoy food. There are four familiar tastes.
While we all enjoy "tasty meals", it really is the nose which senses the pleasurable aromas. The taste buds just pick up the four basic tastes of sweet, sour, salty, and bitter.
I would sacrifice the sense of taste.

Assuming you're speaking only of the 5 physical senses (not a 6th sense)...
It's a really tough choice, but I think I would give up sight. The imagination is a powerful thing; since I've been seeing all my life, I can easily conjure up images of all the beautiful wonders I've seen. And if I've not seen something, I've enough experiences that someone describing what THEY see would be sufficient for me to imagine.
But I could never do without hearing another symphony or being able to sing along to my favorite tunes. I love the pleasure of food too much to give up smell and taste. And not being able to feel...like being paralyzed...would make me a prisoner in my own body. I would go mad! I will always want to feel the warmth and texture of my husband's hand in mine, or the feel of his strong arms around me.
Definitely sight. It deteriorates with age, anyway, so I could give it up sooner than later.

It would have to be taste as the other senses are to important to loose smell for danger such as gas or fire hear for danger such as alarm bells etc and not being able to hear my children would be awful sight for danger as i am nosy and like to look at things and seeing my children grow is good and touch never being able to feel would be awful i could live with out taste but the downfall is i would never know if i was being posioned lol but my sense of smell would hopefully take over and help me reconise any danger

Smell is too important.... I think. So is eyesight. Hearing...hmm too important as well. Touch? Hmmmmmmmmm...... no I need that too.
That leaves taste. Sorry, it's just not as important. But damn I'm gay so that means I couldn't enjoy it when I...
THIS IS TOO HARD, DAMNIT! Okay, we'll go with touch then. Yeah. I'm gonna be different and say 'touch.' The other senses are simply way too important.

I'd have to say sight. I think it'd be different to not be able to see. I need hearing to play my instruments/sing, touch to stay safe, and smell and taste to enjoy food.

Smell - I wouldn't want to have to cope without being able to see or hear. Without taste life would be pretty dull and without touch would be boring and could be dangerous so it would have to be smell...
