BASTARD! and Berserk are both EXTREMELY violent and bloody...! They are both great, but neither has as good a plot as Samurai X.
Other good violent anime include:
Blood the Last Vampire
Both Vampire Hunter D movies
Twilight of the Dark Master
Akira
Ghost in the Shell
Ghost in the Shell 2

even though it is not a samurai or sword anime Blue Gender is quite violent and bloody. Otherwise you also have :
- Elfen Lied : blood, blood and even more blood
- Berserk : haven't watch but I know it is violent

vampire hunter D(very bloody).
Fist of the north star (violent but not sure if its anime, this one guy did get his back snapped in half.)
I like trinity blood but its not super violent. but there is some violence.

I'd say Elfen Lied is up there: The opening scene of the first episode is a dismembered arm ... 23 people die in the first few scenes...
