Imagine a black circle. Inside this circle is everything we know. The distance around the circle (the circumference) represents our exposure to things we DON'T know.

As we learn more, the inside circle gets larger, but so does the edge - we are exposed to more and more things we don't know.

This goes on infinitely.

The world changes all the time. Things evolve like species, plants, and diseases. I think there will always be something to study.
Besides earth there are other plantets to study and who knows a galaxy far far from here may have life which is even more things to study.
So all though it's highly unlikely that we could know everything, that doesn't mean there is nothing to live for.
