The definition of spouse refers to a person that we are espoused or "pledged" to. The idea, of course is to forsake all others until death. Therefore there would be no need for a plural since there would only be one. Under traditional grammer rules it would be "spouses".
In most cases, however the plural of spouse is defined as "the person one despises less than the person that formerly received half their wealth".
