there seems to be no option to enable html encoding when using safari, is it due to the mac program, and if so are there any suggestions as to waht i should be using. I love my mac, even with its quirks.

Use Entourage for the Mac. You can use HTML formatting in your emails. BTW did you notice that Internet Explorer 7 for Windows has finally implemented Tabs. Safari has been able to do that for three years.

I don't think we know exactly what you mean. If you are using Safari for email, it is web email so that is related only to the web site, such as Yahoo Mail. You need to use the Help guide for the web site to set your mail preferences to show HTML. This is not related to Safari or to Mac.
You should also consider the risk of emplimenting HTML in email. It opens you up to lost of bad, hidden software. You are unlikely to get a Mac virus, Trojan horse or worm but you can still get spyware from HTML email. It is not because your friends hate you. It is because they are unaware that the spyware is hidden in the HTML content.
