As the above answer states, the role of monks throughout history has pretty much been unchanged. However, during that time, there were far more monks, who lived in Abbeys, which also basically served as regional libraries. Also, before the advent of the printing press, one of the chief duties of monks was to copy books by hand, mostly the Bible.

monks roles have not changed much since the beginning of Christianity, there roles are to work, study and maintain a holy lifestyle as defined by the rules of the monastery

I think the big thing they had on their plate was converting pagan Britain. The last pagan Saxon king was Penda in the 7th century. Other than that, they did monk things that were aforementioned :).
