I just purchased a snail (apple snail)for my fresh water fish tank and his shell is beginging to dissolve. I know this has something to do with my water...but I don't know how to stop it!?

It means he isn't getting enough calcium, go to the petstore and buy some Kents liquid calcium.

I had a freshwater snail once that grew to the size of a hard baseball. It was an absolute freak. No idea why. Friends would stop by to see my snail instead of me. Are you sure the shell isn't growing? Do you have a water softener? City water? Maybe you should try some well water or lake water mix.

calcium...needs more, have u tested the water? alkanity, ph lvl, hardness?
