Leaving aside the Force, I have to agree with the answerer that said Luke would not be used to the weight of an actual physical blade.
However, there is something that nobody has even touched upon! We are talking about two different types of training and two different styles of fencing!
Luke's training is in the use of a saber, a slashing weapon. Observe the movies and you will see that by far the vast majority of the attacks are made as cutting attacks, with the edge (side) of the weapon.
Zorro's training is in the use of the rapier, which corresponds to the modern epee. In contrast to the saber, the rapier is a point-attack weapon. It does not have a sharp edge, and all attacks are stabbing or thrusting attacks. (The slashed 'Z', notwithstanding.)
Without some way to chop through limbs at one stroke, the rapier is more likely capable of doing a fatal blow (pierce the heart/lung. etc.)
Historically, the saber was developed as a cavalry weapon. For this reason, saber attacks are not made against the legs. (You are astride a horse, or antigravitic speeder.) In massed cavalry combat, you would not necessarily sit there and trade blows with your opponent for long, you would be swept apart by the other fighters around you. You take a slash at your opponent and move on! The opponent will either ride back to their lines and be treated by a medical officer, or be finished off by someone else.
The rapier can touch any part of the body. Its use is when the wielder is on foot. You stand your ground and keep fighting the same opponent, until one wins, one loses.
Assuming this is a fair dueling situation, with seconds and rules (and, if it isn't, there's no point in talking about it-- one would just do an Indiana Jones on the other), then each time one makes a successful attack ('touch') on the other, the action is halted and they go back to the starting lines, until the referree tells them to begin once more.
Five touches is usual for a practice bout, fifteen for a competition. There's no need for them to kill each other.
But assuming them both to be expert swordsmen with their respective weapons, I have to give this one to Zorro. He is more used to dueling with a single opponent, he has the training to make a wider variety of attacks, and he is used to attacking his opponent's foot to eliminate his mobility advantage, or wound his arm which will then become tired and unable to hold up the sword. Luke is too used to doing a single blazing slash and the fight is over. He doesn't have staying power.

if luke could use the force then luke would win, if not zorro.
Also luke would basically be the equivalent of a kendoka (person who practices kendo) against a traditionally trained saber fighter (zorro).
a lightsaber has little or no weight, and because it is a laser, it requires no proper cutting technique or power to cut with, much like kendo it is a game of "tap me first" only with more hit targets.
It takes more to use a sword than just twirling it around, even if luke managed to strike zorro he wouldn't likely be able to make a proper straight cut as he is unfamiliar with such things (it is much harder than you think to keep the blade straight so it will cut through, you doubt me, get some cutting mats and a REAL sword- not some stainless steel wallhanger decoration and try to get a clean cut). If the blade is turned slightly then the cut might not be fatal or debilitating- which in turn becomes fatal.
It would simply come down to the fact that luke would be little better than an untrained swordsman fighting zorro.
With lightsabers of course luke would win.
However Han Solo would just shoot both thier sorry asses and smuggle more **** for jabba the hut.

I was going to give this to Luke... But barely. My main deciding factor was Luke's cybernetic hand (because he could conceivably turn off the sensors and use it to deflect sword strikes.) I would guess that both Zorro and Skywalker are expert swordsmen (This takes into assumes both of them at the height of their abilities). Then I realized that Luke would not be as adept at using a fully steel sword as he is at using a light saber. This is because a Light saber has no discernible weight on the blade portion. This makes it hard for someone to wield. In turn Luke has honed all his skills to using this weapon. As a result he would find even a rapier's thin blade awkward and overly heavy. This swings the fight back into Zorro's favor.
If we gave both of them light sabers I think Luke Skywalker takes this easily. (For the same reasons)

Zorro would win against the Luke Skywalker from Episodes !V-VI. In the movies Luke is inexperienced and only receives somewhat formal training from Obi-Wan. It's actually very surprising that he managed to disarm (literally) his father, one of the best Jedi of his time. However, in the Star Wars Expanded Universe, Luke improves vastly and founds a new Jedi Order. If it was Zorro vs. Expanded Universe Luke, Luke would win, but Zorro would put up a very good fight. Plus, Luke has that prosthetic arm so any damage done to right arm wouldn't faze him.
