If the soda and flour aren't handy, smother the flames with a pot lid. Lack of oxygen puts it out. If it looks like it's getting out oh hand, call 911. It doesn't take long for a kitchen to go up in flames. Better still, keep a fire extinguisher handy and learn how to use it before you have a fire.

salt or baking soda
always throw something dry like that on it to smother the flames
some extinquishers are made just for grease fires and electrical fires and so on
edit: flour can be used but a word of caution....it can also burn quickly

Cover the pan with the lid if possible, OR Throw a hand full of baking soda on the fire and out it goes, But DON'T put water on it, you will spread it and but yourself/

DO NOT USE FLOUR!!!! it can explode!!! i've seen it. put the lid on the pan, or use a fire extinguisher. flour dust is flammable.
