"Race" and "ethnicity" are both pretty vague terms that may often refer to the same thing. In the U.S. "race" (which flatly does not refer to bone structure) generally refers to larger, supposedly biological, groups that transcend cultural and national designations, whereas "ethnicity" refers to a person's cultural heritage. A U.S.-based example would be . . . say, "white" is a race and "Italian" is an "ethnicity". An example that could be construed - again in the U.S. - as either a "race" or an "ethnicity" could be "hispanic", even though this label actually covers a lot of different racial and ethnic groups. So that fills in your (??????).
I can't stress to you enough that the difference between a race and an ethnicity is largely arbitrary and depends on the standards used in a particular political regime.

Ethnic background refers to the country of origin of your family. Race is a term that refers chiefly to different features that certain groups of people have in common, such as skin color and eye shape. Terms like Caucasian, Asian or African refer to "Race", terms like Italian, Irish, Chinese refer to ethnicity.

erhm... I'm not sure if this is the type of answer your looking for but. Genes is what more or less defines where you get your ethnicity: skin color, eye color, hair color, attributes, etc. Or Genome. In other words DNA. and all of that is Genetics.
