I'm talking mainly about "The Gherkin", Canary Wharf and the BT Tower, but any answers about skyscrapers would be great!

The BT Tower is impossible to get into these days. The Gherkin is open as part of the "Open House" weekend every September - http://www.londonopenhouse.org but you must book ahead. Canary Wharf is also difficult to get in to, but you might be able to get into the HSBC building if you have an account with them.
Tower 42 has a public restaurant on the 42 floor

Doesn't the BT Tower have an observation deck that charges admission.
