What a cool question:

Rosanna by Toto is considered one of the best grooves ever! Check it out. It's really simple and really hard to play!!
There's a song called Hit by The Sugar Cubes where the drummer is using two different size snare drums, playing the higher pitched one on the off beats - that's pretty cool.
Check out Brighter Star Than You Will Shine by a Scottish band called Deacon Blue. It's a tricky one where you have to use your left hand in a way you wouldn't think until you try it.
On the heavy side of things:
I'm Broken by Pantera - very cool 7/8 verse beat
Windows to the Soul by Steve Vai - amazing 11/8 syncopated rhythm
And the absolute best beat I have ever heard is a song called Party In Simon's Pants by Los Lobotomys. It is in 17/8!!! If you can find it anywhere on line, it's on the Candyman album, check it out - you will not be disappointed. Simon Phillips is an AMAZING drummer.

Some of the best drum beats are not ones that are necessarily complex or "busy", but serve the song the best. I'm primarily familiar with classic rock so I listed the best ones I could think of from that genre:

Paul Simon's "Fifty Ways to Leave Your Lover", Steve Gadd on Drums. This is a great linear groove. Many drummers aspire to be able to play this, even though it sounds very simple.

Led Zeppelins "Fool in the Rain", John Bonham on Drums. This is known as the "Bonham Shuffle". It is a half-time shuffle that is mimicked by Jeff Pocaro in Toto's Rosanna. Also check out Zeppelin's "When the Levee Breaks" for a good hard driving rock beat with good single bass pedal work.

The Beatles' "Come Together", Ringo Starr on Drums. I like it because he uses tom and hi-hat fills within the groove.

Genesis "Get 'em out by Friday", Phil Collins on Drums. This song switches between a straight shuffle and a half-time shuffle. The straight shuffle part, he is riding with both hands, one on the ride and one on the hi-hat. The half-shuffle is played on the quarter notes only so it has a slow eighth note feel to it with triplet seperations. Very cool. He does some similar stuff in "Return of the Giant Hogweed" and other early Genesis songs.

Peter Gabriels' "I Have the Touch", I'm not sure who the drummer is (maybe Manu Katche). Very straight forward, but makes the song.

Jimi Hendrix's "Fire", Mitch Mitchell on the Drums. Very dynamic and exciting groove with lots of seperation.

Also, check out just about anything from Steely Dan. They've used an array of drummers, but their songs almost always have great a groove.

AC/DC- If you want Blood(you've got it). They got some good beats on their songs.
Green Day's drummer is a beast, their songs kick especially on Dookie.
Audioslave has heavy drums
