civil cases. Do you think these methods should be used to resolve criminal cases?

Not at all, as criminal cases are mostly treated as crime against the State and has to undergo the trial process under judicial system. Arbitration and mediation are fast track mechanisms to resolve Civil and Commercial disputes and to lessen the burden on courts.
Even white collar crimes cannot be resolved by Arbitration or mediation.

I think if there were a guilty plea arbitration would be an interesting way to determine sentances. For determining guilt arbitration would not work. What incentive would a defendant have for waiving the advantages of a jury trial including nullification and puting the government to its proof in order to have your case heard by someone the state has chosen that cannot be appealed who may or may not apply the law correctly.
