Is it because they thought it was a false start at first but then after discussing it they determined it was offsides, or is there a rule that determines when a play is stopped on offsides (and if so, what is the rule)?

They call those plays "unabated to the quarterback," meaning that if they'd let the play continue, the offending defender would have a free, uncontested run at the QB, which would pose an unwarranted risk to the QB's health.

well because if the player that jumps offsides has an open shot at the quarterback then the qb could get hurt on a meaningless play but if the defensive player who jumps offsides doesn't have a clear path to the qb then they will let the play continue and it will be a free play

If a defensive player crosses the line of scrimmage and the ball is snapped then that is offsides. If he touches the opponent in it called encroachment. Anytime an offensive player moves before the ball is snapped it's offsides. False start applies to defense

i think you have it. false start stops the play, offsides is a free long ball play for the offense, and yes when a play is stoped and determined offsides it was questionable to the officials

For the Offense, they usually call false start or illegal procedure. On the Defense they usually call Offside or Encroachment.

sparkler, try again. the bears DEFENSE got called for offsides last night. but like everyone has said, they stop it so the quarterback doesnt get drilled. more and more quarterbacks are becoming smarter by spiking the ball when they see a flag right after the snap.

If the offsides player has an unimpeded path to the QB, they will blow it dead as if it was a false start so that the QB doesn't get killed.

only when it's the offense that's offside.

It's just to keep the players safe. the offense can't gain anything anyway, if they do the defense will just take the penelty, so no reason to risk an injury.
