That is singular, those and these are plural (that pencil over there vesus these papers and those folders.). Which refers to both so it's harder to tell but I would assume that (see singular) it is singular because you are choosing between choices when using "which".

when using more than one person, place or thing which is what u use as your relative pronoun oh and just punch in relative pronouns under search engine it will give u some great examples
