My son (23) and I (and my dog) are thinking of moving to Louisville KY or Austin TX as an in-between move before eventually moving to Portland OR. I am wondering what the atmosphere is like for displaced New Yorkers in Louisville and Austin. We need a place that's good for animals, music, food and crafts, that's tolerant of alternative/pagan spiritual beliefs.

I think you would love Louisville. From your description of what you are looking for, you would be most comfortable in the Highlands neighborhood. It is located along Bardstown Road and is near Cherokee Park (designed by Olmstead, who also designed NYC's Central Park) and has an area known as dog hill since dogs are allowed to run without leashes in that section. There are many music venues in the city, ranging from opera and orchestra to jazz, country, and rock. There are many diverse restaurants, and Bardstown Road is sometimes called restaurant row. Louisville has many arts and crafts shows throughout the year, with the largest being the St. James Court Art Show over several city blocks in the victorian "Old Louisville" neighborhood. Louisville is also a very tolerant city, with many people having alternative spiritual beliefs. Although you say you are looking for an in-between move, Louisville is filled with people who moved here without an intention of staying, but who stayed anyway due to the relatively mild climate, low commute times due to several highways, and low cost of living.

you're ideal - Jungle Jim's is in simple terms about adequate to make you progression right here!
