I have a fairly small bathroom that has old ceramic tile floor. I've come to the conclusion that taking up this old tile is going to be very difficult and result in some major chipping of the subfloor in the process. I'm tempted to just install sheet vinyl over the tile. Can this be done? How do I need to prepare the tile in order to lay the vinyl? Also, there's one spot behind the toilet that really needs some leveling. Is there a good floor leveler that I can trowel down that will adhere to tile? thanks.

Rather then tell you what you can't do, lets look at what options you do have. If you are looking to install a vinyl product you can go over with a large amount of floor leveling, but it may not look the best.
If you installed a FiberFloor you can go over the tile with to little floor prep. FiberFloor is a product that is a vinyl sheet good with a fiber glass backing that allows you to install over tile. The floor prep may still need to be done depending on how deep the grout lines are.
Also as a option is SnapStone Ceramic Tile or Edge Floor Tile. These are ceramic tiles that are designed to go over existing tile without the tear out. We have seen great success and no problems with these products.

You may want to call a tile contractor. It may actually be cheaper to go over the ceramic tile with another layer rather than pull up the old tile, lay new sub layer and then the vinyl. Also - the ceramic tile floor is much better for your home value than the vinyl.

Your flooring is only going to be as good as the surface beneath it. If you put sheet vinyl flooring on top of tile, you'll get indentations where the grout lines are from the floor underneath.

The subfloor is likely wood, so I wouldn't be concerned about chipping as long as you are careful when you remove the ceramic tiles.

When laying a vinyl floor, the surface must be free of dust (so the adhesive will stick) and level (so it won't show imperfections underneath).

There are a number of floor leveling compounds available at your local hardware store. They are easy to use, but be good to yourself and remove the toilet (and cap the drain while you're working) before you start out.

You can install sheet vinyl over sound tile. Remove any broken tile or tile that is loose. Apply FIX-ALL over the tile to fill the grout joints to make a smooth surface. FIX-ALL can also be used to level behind the toilet.

Remove the toilet and install the sheet vinyl. Install a new wax ring and then the toilet.
