I am just curious, as to what determines skin color and if a black man and a white woman can have two children, one obviously black and one obviously white.

Yes, it is not common, but in some cases children can end up only one color of the two parents.

.Genetics determines skin color.
The answer to your question is yes .
Example a black man marries a white woman and have several children
Some look like mom but with light cafe' au lait colored skin and brown eyes.
A couple have the dark skin and the fathers facial features
One looks white with blond hair and blue eyes

Also ... 2 white people have a child of color because a recessive gene from a former ancestor comes forward . When slavery was popular , many white plantation owners would take colored girls as their mistresses thus producing off spring of mixed color and this carries from generation to generation.
Color is only a pigmentation gene

Of course, just the same as a couple of the same race will have two children, one looks like the Dad, the other the Mom.

Skin pigment is produced by melanin. Offspring can have varying amounts of it. The answer to your question is yes, it is possible, but it is more likely that children will be of intermediate complexion.

Yes. Its the same as those tests we did in science class where we figured on heterozygous and homozygous genes.

Depending on the dominant gene would be the odds of such event occuring.
