Generally there's not that much difference, other than specific materials used (more variety in the modern version), and insulative properties.

the building industry today has never been better its done a complete revolution since i was a boy apprentice. The materials are just great referring to all the plastics. roof trusses make shortwork and no more carrying everything up by hand but just one thing is missing the skill of the chippy with his steel square and the bricky working out his Gothic arch or a complicated bullseye setting up his trammel there are some people around can be mustered up to do these jobs such as repairs to a church flint wall having to scutch every stone to fit but the tradesman to-day has an easier working day but lacks the skill of the old tradesman but i repeat houses have never been built better than they are now

In terms of pitched roofing specifically the following differences are notable;

Man made tiles (concrete etc) generally now used instead of natural slate, stone etc.

Where ceramic tiles are used the process of manufacture is entirely different.

Felt is used underneath the tiles instead of sand / cement "torching" which was used traditionally to stop snow etc blowing into the roof space. This torching used to fall off and make the plaster ceilings bulge due to the weight also it can contain anthrax from the cow **** used in the manufacture of some torching (thats not a joke) and so must be tested prior to removal.

Pre manufacturered trusses are now used instead of a traditional on site installation, these are significantly lighter and in some ways more "consistent" in their construciton because they are factory made.

Obviously more insulation is now used and since we now have developed highly sealed roofs compared to the old methods, we now have to build in ventilation to the eaves of the roof.

Breathable felt membranes are now available.

houses today are not as ornate, and not concerned with ornamental detail--the victorians were obsessed with these things. it would cost a fortune today to try to duplicate all the craftsmanship and materials neccessary for an authentic victorian construction. a good thing about todays houses----they are way more fireproof.

just the trusses really come ready made and nearly all roof products are plastic except tiles.
