There are two ways to manage the music on your iPod: manually and automatic. Automatic is what you have going at the moment. You plug your iPod into a computer and it syncs to the music in iTunes. Manual is where it doesn't sync, you put the songs you want on the iPod yourself.

I'm not sure if there's another way, but if you get iTunes ready and plug your iPod in and wait for the "Updating iPod" dialog at the top and quickly hit the cross to the right hand side you might get away with it. Then (assuming your using iTunes 7) go to:
Devices > Your iPod > Options (down the bottom of your iPod screen) > tick "Manually manage music and videos"

good luck...

make sure your songs are backed up on the other computer. You can find the actual files in the my music/itunes folder. Transfer those files over to the new computer using an external hard drive or the Ipod itself(as a storage drive). You only have to do this if the new computer wipes out the ipod's files.
