Depends on the level of the witch and where they draw their power. If they draw it from nature you will find them out in the elements. High level sorceress you may find in a castle.

The earliest known cases of witches (pre Dark Ages) lived in caves and atop mountains. In modern pop culture, the answer would be 'houses' or some variant thereof. Witches have never firmly been associated with castles. Warlocks, their male counterparts, are more often found in castles or towers.

In Anglo-saxon dominated culture houses are most widespread, especially ramshackle cottages, in Russia they live out in the forest in a cottage that can move on chicken legs, in German speaking countries they can live anywhere, eg. Snow Whites bad stepmother in a palace, Rapunzel's foster mother in a tower, the ginger bread house, of course, and there are many stories of witches who lived in a mill, and the good witch in "Goosemaid at the well" has a farm.

Each story and movie I have heard or seen has witches living in a house/cottage. Hansel & Gretel, The Witches, Hocus Pocus, Charmed are some examples.

Ginger bread houses......... No, really I think they were normally widowed or spinster women who lived in houses on the outskirts of villages, thus making them more mysterious as they were not fully a part of the local community.
