The determining factors that distinguish boats from ships has evolved over time. The term 'ship' traditionally referred to a sailing vessel having three or more masts. In modern times, however, a ship is usually classified as a vessel of more than 500 tons of displacement. A ship can also e classified as an ocean-going vessel. Everything else is a boat.

One definition of a "ship" is a vessel that is square rigged on all masts. i.e. a sailing ship where all it's sails hang from the masts on yards. A barque for instance has a mixture of yards and sails rigged in line with the keel. The latter sails are carried on the last mast called the mizzen. So a 3 masted barque would have fore, main and mizzen masts
The other one, more lightheartedly, is a ship can have boats but a boat cant have ships!!!
Lastly, submarines are also known as boats in the navy

I once saw a definition that a ship has a captain, a boat doesn't - even though the skipper / owner / drunk in charge might call themselves that.....
I don't know if it's true but I like the sound of it

I was told the a "ship" was anything too big to be carried or moved by any other vehicle or vessel, where a boat can be (i.e. a trailer). Scotty has the right idea too.

All craft measured from 200 feet and under are considered boats. Anything from 200 feet and up are considered ships.

Typically, ships have a steel hull, while boat hulls are made of wood and/or fiberglass or some other material besides metal. Jason is correct, so ships are surface vessels. Boats can be surface vessels or submersibles. A submarine is always definitely a boat.
