Yellow, Whites, Pearls, Pastels, Crystals call them what you want.... It is a very common color in Betta, ecspecially pet store quality fish.

Male or female, these colors are perfectly normal and healthy.

When Betta get ill you don't tend to notice it in their color, unless you see it becoming dull. This can be due to other things, however, aside from sickness.

If the fish are acting normal, they're heathly. If they are sluggish you can try to warm up their tanks. Betta do well in any temperature but they do prefer warmer water and are most active in water that is around 70 degrees.

You can also feed them better food, like baby brine shrimp or blood worms. You can get these at most any petstores.

The peeling skin is quite likely a reaction from the fishes slime coat to either a water quality issue, or more likely an infection. Test your water for Ammonia, Nitrite and Nitrate and confirm that is OK. If so, then as this appears to be an external issue, a combination of Api Melafix and Pimafix will hopefully resolve the problem, these are two meds that can be combined unlike most others. Give them a few days but if no improvement is obvious then e-mail me and I'll point you in the direction of more specialist help.

Yes they do come in opaque white/yellow and yellow (aka non-red) but if you have a feeling your fish is sick, don't assume it's a white or yellow one just yet as they generally do lose their colour till they get almost white (yellowish before that) when they're terribly sick.

Yes, yellow and white colours can be made to stand out beautifully by having a black lightly patterned backdrop on the back of the tank.
