It is really hard to know everything about medieval knights because they existed for the long period of time.The first ones were The Hospitalers of Saint John who were firstly mentioned in the first half of 11 century, later on the new order of knights that appeared werte the templar knights who are remembered as the greatest order of all times.They were founded in the first half of 12 century and lasted until the beginning of the 14 century, so they are no more.And finally there were Teutonic knights who in the 16 century founded their own state on the Baltic Sea called Ordenstadt meaning the Counry of the Order.I hope that you will find these tips useful.

Little known facts:
Under their armor, they wore silk underwear.
The mace was originally designed, in a much smaller version, to insert into the urinary hole in chastity belts.
When not Knighting, most Knights earned their keep as traveling troubadors and jesters.
The "Black Knight" truly was a Moor
The "Green Knight" (of King Arthur fame) was impoverished and could not maintain his armor. After it tarnished, he decided to paint it green.
Knights, at night, did what any young agressive male would do. They defrocked fair young maidens. Except the ones who pulled duty as Knight watchmen at the castle of the liege lord.
The battle axe was not really a weapon, but some knights who toiled as timberman when not at war carried them to battle because those warriors were more adept with a familiar tool than with a broadsword or lance.
The knights mount of choice (other than the fair young maidens) was the Clydesdale, bred on the Isle of Clyde as a draft animal sturdy enough to pull a plow through the rocky terrain.

Ok I'm a historian and you've confused me. There were knights all over Europe some serving states like the Angevin Empire, some involved in contests between Barons like the Wars of the Roses, some involved in massive orders like the Teutonic knights in Poland or the Hospitalers in Israel. There were states effectively run by knights like the German states. There were kings who pretended to be knights and tied in tournaments like Henri of France in the 16th Century. There were knights who abided by a mythical code of chivalry- go and read Chaucer to find out about them. There was a whole literature of courtly love. There are land relations which bound knights barons and serfs together- Professor Holt in teh English context is the best author on that. As late as the 17th Century Charles I attempted to tax knights in England-

There were many different courts of Kings and Queens at that time that had Knights, but go to www.history.com and type in the search bar the Knights Templar, or British, French, etc.
