Sourceforge.net offers a lot of open source stuff depending on what you're looking for.
Also if you're looking for blogs or CMS's and would like to test a lot of them out try looking at http://opensourcecms.com

You start by consulting. This means you start by working on other people's projects. Then if you find that you build up expertise in a certain area, and that area has enough opportunity, then you might choose to brand your own product.
