You can.
Moleskine makes watercolor books now, same sizes, and they are best for watercolor--and for gouache too (thicker paper, buckles less); AND take pencil and ink very well.
You could use pastel on most of the different types of books' papers, but I would suggest spraying it with a fixative afterward, building up with light coats you let dry in between the coats.
No oil paint.
Certainly pencil works well on all the papers but probably not gel and fountain pens because they might leak through the page (when in doubt, test this by making a dot and holding the pen tip on the paper for a few seconds). But, as indicated above, no need to test the Moleskine watercolor books for this problem.

Not that I have ever seen. That's why I stick with Strathmore. It was the type on all my art college supply lists as well. Plus you can get it in various weights and presses. There an individual color sheets available at art supply stores sometimes too.

I've got a better question...who gives a rats ***! No really, I'm just joking, but what the hell is gouache? Isn't that some kind of Hungarian noodle dish?

You can use gouache on just about anything.
It is opaque and dries quickly. Use minimal
water if you're concerned about soaking the
page, but in general, it should be fine.
