At some jobs you have to work the day before and the day after the holiday to get payed if they are your regular work days and if you don't show up, yes they can keep your holiday pay.

If you are in Australia it would be a good idea to get in contact with wage line or job watch. They are up to date with all the legal stuff. There are different rules for different states and territorys, and from country to country. If you belong to an industry related union, they would be able to tell you also.

Yes, companies are not required to pay holiday time. Unless you signed an explicit contract that stated you would be paid for those days, your employer does not have to pay you for them.

Are you part time or full time?
Salary or hourly.
What is company policy for holidays.
