In your first example, neither is correct because when you say three pieces of something, you use singular. So it would be three pieces of product.
With that change, B would be correct: Three pieces of product (or three products) have been assigned to be inspected next Friday.
In the second example, A is correct. If you want to use 'regard' and 'to' together, you would have to say "In regard to item 572: it is expected to be shipped out by next Monday" but if you say regarding, it is a verb and you don't use 'to' between the verb and the object. Just 'regarding item 571'
In fact, if these are sentences that you are creating, and not sentences that have been given to you, the most usual construction would be:
Three pieces of product have been assigned for inspection next Friday
and
Regarding item 572, we expect to ship it next Monday.

neither option is good for the second choice; try to avoid starting sentences with a verb ending in "ing", rephrase it:
Item 571 is expected to be shipped by next Monday.
you don't need to say "out" if the person to whom you are speaking knows which direction it is being shipped
