There have been a number of studies done on this topic and most of them have been inconclusive or contrary. The general thought is that Sunday night between 7:00 PM and 10:00 PM are the best times to end auctions. Monday night comes in a distant second place, followed by all of the other days and times. eBay has also stated that they haven't been able to find any best times/days.

The only problem with the Sunday night assumption is that there are too many variables to consider with the time frame, depending on your market. The 7-10 target is great for US only auctions, but if you are open to shipping internationally, then 7-10 US time is early in the day in Europe and late morning in Asia, which definitely fall out of the target range.

Also, currency exchange rates favor the European market over the US market right now. Euros can buy a lot more than dollars, so having a few Eurpoean bidders can push up your profits significantly. As long as you have them pay for the shipping, then you won't run into any problems at all.

As someone who has sold a large number of items on eBay over the years, I can tell you that the studies are correct, in my experience. I've had auctions end at all times of day and haven't found any relationship between the time an item ends and its final selling price. If people want an item, they will bid on it, or mark it as "Watch This Item" and bid on later it if they are interested.
