What interests you, something in which you're well informed enough to write "supporting" ideas. That's the first start. WHAT DO YOU LIKE, & KNOW ABOUT. Friends, cats, dogs, music, books, (I suggest you don't "cripple" yourself with anything profound, or controversial). Also, sweetie, check you spelling..
"My friend & I are "TO", not "too." "To" is a preposition; "too" is an adverb, as "too much, too bad," etc. "AN English paragraph, not "a"--remember the indifinite article before the vowel "E" is AN.
Your correct spelling & grammar will be be judged as well as the content. If you like your subject & have some knowledge about it, it should read well. Good luck!
Edit: Jason Y is in a bad mood; ignore him. dea4141 (childhood obesity) & Dreamful (animal experimentation) are good ideas, but I don't feel from the way you wrote your question that you want to "go there." Put together a scrapbook with you and her throughout the years. Go to the Scrapbook section of a craft store, and there are lots of different scrapbooks out there, some are very simple that you just put the pictures in little slots, some are predone pages that you just put the pictures on the page, and then maybe write something about the pictures. You are pressed for time So I would suggest something really simple. I would go for a pocketed scrapbook- where there are pockets to put the pictures, you can also buy journal boxes or photo mounting paper - if you want to personalize it and write some special messages to her. Just write it on the slip of paper and stick it in the pocket. If you tell the gals at the craft store what you want to do, they can give you some great ideas too. Edit** Also I noticed at Walgreens they have all kinds of gift cards- they even have some for US airways and Hyatt and Best Western- you could get her gift cards for travel- that may be a little out of the budget though (would be for me).

Write about a rule that you think is dumb: the drinking age, the driving age, some rule at school, or something. Then think of three REASONS why it should be different. "Just because" doesnt work. After you list some reasons and explain a little, then add a concluding sentence and you have yourself a simple paragraph.
