I had a recipe before that was super good and it thickened with boxed potatoes...if anyone knows that one that'd be great too....thank you!

I love potato soup. I usually use I potato per person Over boil
them so they are extra tender, drain the water add half n half or milk to your desired thickness, mix add salt & pepper to season. Enjoy.
