I read up on Liberal Arts and I wonder, How advanced can you study? Can you take calculus, Physics, and Chemistry. Just broadly learn that then later focus on a narrower degree? I am going to be in the Navy and Liberal Arts I can take online. I just want to learn while in there, so I don't get rusty. Can you take high courses just not specialize? I don't want to be stuck doing basic algebra again.

A Liberal Arts degree is a degree that focuses on Humanities and Social Studies. It's not a scientific degree, or a vocational degree such as business, computer science or engineering. A liberal arts curriculum includes art, literature, writing, philosophy, psychology, sociology and many other subjects. It can also be considered a "general studies" degree. You should be able to tailor your curriculum to add advanced math courses such as Calculus, Statistics or Linear Algebra, or advanced science courses such as Organic Chemistry, Microbiology or Advanced Physics. This is really something you will need to discuss with your advisor. You can always get a bachelor degree in liberal arts, and later on get a master's in the field of your choice. Many liberal arts graduates apply to law school, medical school and business school.
