The spelling.

"Tonight" is spelled correctly; the other is either a derivative or shortcut/misspelling that has since been adopted as common usage.*

"Tonite" is often used on signs, or in similar situations, to shorten the word so it is easier to read on sight, such as driving past a billboard or marquee. Other common shortcuts include using "Nite" for "Night," "Lite" for "Light," or "Thru" instead of "Through."

* Note, according to Wikipedia, "TONITE" has
become adopted as common usage:

"A spelling of 'tonight' sometimes used in announcing events."

It also means:
"A type of explosive. Its name was likely taken from Latin tonat = 'it thunders'."

The correct spelling of the word is "tonight" on both sides of the Atlantic. Many businesses have adopted the "cute" spelling of N-I-T-E on signs, but it is incorrect. Similarly, many signs say "DRIV THRU", but neither word in that expression is spelled correctly. (By the way, the word "bee" is misspelled in the phrase "spelling bee" in an earlier answer.)

They have similar meaning but are spelled differently. Either is OK and generally accepted. Unless you are in a spelling be. Then, go with "Tonite." Good luck in the contest! Pete.
