It means that we are litterally a melting pot. We have people from many different cultures, societies and countries and we merge together as one. We are united in purpose, that purpose is the fight for freedom and equality.
So long as people from other nations come here legally they are and should always be welcome with open arms and are allowed to become Americans and take part in the American Dream.
It means that we are all Americans. Some of us are of german ancestery, some of French, Italian, Arabic, Hispanic etc.. We come here, or our ancestors did and we become Americans. THat is the beauty of this great Nation. From Many Nations, we became One Nation.

Last time I checked, E Plurbius Unum is STILL the motto of the United States of America....
To answer your question it has more to do with the "melting pot" of immigrants from other countries that immigrated to the United States in the 1700's.
I've always been told that it means One from Many, but I suppose the way you put it could be right too.

The term (actually "e pluribus unum") actually predates the reasons given by most other responders. It goes back to the founding of the country and simply means that the many colonies of the New World came together to create a single nation.
