Original recipe: The chicken is first dipped in an egg wash mixture than thrown in the flour with the seasoning. The chicken is cooked in a pressure cooker for approximately 12 to 14 minutes.
Extra crispy: dipped in a different egg wash mixture, tossed in regular flour, dipped again and tossed again. fried without pressure.

It is the chicken skin and the colonel's 11 herbs and spices that has sat in a vat of grease for about 25 minutes. You should see all the grease that drips off of it when it is pulled out of the cooking vat.
They also use the leftover grease for the gravy. It dries up in the shapes of cones over a period of days and then they cook it. It is pretty gross.
