You need component cables (red/green/blue) to get HD resolution from your PS3 to your HDTV. They are not supplied when you purchase the PS3. The best it does out of the box is standard definition via analog yellow/red/black cables.
Fortunately, the same component HD cables for the PS2 work on the PS3. So if you bought those previously, you are set. This will get you up to 1080i (interlaced) analog HD which should be fine for most HD consumers.
If your HDTV is one of the newer breed that supports full 1080p (progressive) then what you is an HDMI cable connector, which is also not supplied in the box.

You can connect your PS3 to your TV in the old way or with a HDMI cable that transfer digital audio and video.
If your TV is new, it may have that connection.
PS3 give you 1080p output, but to have that quality, your TV has to have that resolution.

You need the HDMI cable (sold seperately) for the PS3. Your tv MUST have the HDMI inputs built-in.
