I will be moving to japan and just want to know!

You can't hunt in Japan. No guns allowed there except by the government and police (and even they don't have that many). You can fish though. Mainland Japan has some pretty decent fishing spots but the big thing to do there is deep sea fishing. And if you want to take up a new hobby you might want to try scuba diving. They have some of the best dive spots in the world off of Okinawa.

Fishing yes, hunting no. Hunters must be specially licensed to own guns. Japan is not the USA and the chances of a foreigner being licensed to own and use a gun are probably zilch. It's hard enough for a Japanese person to own a gun.
Fishing, on the other hand, would be easier to get into, esp if you lived in the mountains near a river. The tackle might be expensive, but it can be purchased secondhand. There are stocked ponds where you rent the gear and pay to fish for a couple hours. Or you can also go out on a chartered fishing boat.

I'd find a Japanese fishing enthusiast and ask them to show you the ropes.

Yokosuka, or the bases in Okinawa are nice place for fishing. Maybe Sasebo too?
But they are Navy and USMC...USMC...
Yokota is on the outskirt of Tokyo. Maybe you can enjoy fishing at riverbank in Saitama area.
