It is Extra Virgin Olive Oil. She just abbreviates it so that way she doesn't have to say that long group of words all the time because she uses evoo a lot!

extra virgin Olive oil. Trouble is when you cook with it you lose much of its flavor. Use cheaper olive oil for cooking and evoo for salad dressing.

I'm with you. I don't understand how anyone can love to cook and how do we really know that it's extra virgin olive oil? The minute you open the bottle, it becomes plain old olive oil.
